My question is this. If my iMac hard drive fails, how do I sartup into the external if I don't have access to the "startup disk" to select the drive?
Is my method of starting up correct or is there a simpler way?

Your method is correct...when you can use your startup drive. But another method exists: While booting, hold down the Option key until a screen appears which shows all your bootable drives. Select the one you want (in this case your external drive) and click the arrow. Your Mac will then boot from the chosen drive.
