How to protect a folder on destination

How can I protect a folder on the destination drive (i.e. keep it from being deleted).

I have two drives: Production and Backup. When I installed the Backup drive I used SD to copy the Production to Backup. The Backup drive is larger than Production and I have been using Backup to also save data from a second Exrtras drive. For convenience the Extras drive is manually copied into a singe folder on the Backup drive.

So, how can I perform a smart update of the Production drive into the Backup drive but not delete the contents of the Extras backup which is on the Backup drive.

According to the manual "Ignore – doesn’t copy the matching files to the target" but it doesn't say anything about not deleting ignored items if they already exist on the destination but not on the Source (it just states it won't copy them). Should I make an empty Extras folder on the Production drive and then SD won't touch the Extras folder on the Backup?
