Backing up to a NAS

I have a dedicated NAS of 300 Gigs for my backup. My desktop consists of about 44 Gigs of data (several files include Parallels Virtual Machines, and are therefore very large, 7+ Gigs each). I'd like to backup my entire desktop to my NAS device, however, it takes an exceptionally long time (I have yet to get a full backup of my computer). Does anyone have a recommendation on the best approach to backing up all of this data? Is it possible to split the backup between multiple files (1 file for each Parallels instance, and one file for everything else)?

Additionally, I'd like to be able to access the files that are backed up without having to re-image my machine back to a prior state. This would allow me to selectively restore and/or verify the backup. Can SuperDuper! allow me to access the backup image in such a way that I can extract specific files at an arbitrary time?

Thanks!

You can certainly have two copy scripts, one that just does Parallels and one that does everything else (see the User's Guide).

You can access the backed up files by simply mounting the image file: they're fully accessible in Finder.
